Sous Chef, New Hotel Mertens (Grand Rapids)

New Hotel Mertens is a traditional brasserie, bakery and rooftop lounge that opened in downtown Grand Rapids in 2017. We cook all dishes and sauces from scratch. If/when you walk through our walk-in and dry storage you will quickly see that we work with the highest quality proteins, produce and dry ingredients.

We are seeking experienced, professional, and healthy BOH management. This is the only Sous position and it will report to the Chef de Cuisine.

Successful applicants will have:
-At least 5 years of experience in a kitchen in elevating roles; preferably with salaried experience
-A track record of *not* moving from job-to-job in Grand Rapids (or anywhere else)
-A track record of building positive relationships with their teammates and employers (references will be checked very carefully in all cases)
-A highly coach-able person is needed for this position. Our Chef de Cuisine is a professional who performs at a high-level and expects their sous to work equally as hard, be willing to learn and to not take constructive-criticism personally.
-A passion for food with at least a keen interest in traditional French cooking
